We buy most of our nuts raw and direct from the growers. We roast small batches in shining copper kettles (Peanut) in pure vegetable fat. Slow roasting while stirring with a hard maple paddle until our candymaker say’s thats perfect. They are dried in the open air on a marble slab and cooled to room temperature. Within 24 hours we hand dip each cluster. Our Big Dipper supervises the process. Freshness and flavor sealed in.
